A Week in the Life
Monday
After a super eventful weekend of hiking and camping, Monday was the last thing I was looking forward to. In an attempt to kick off the day right, my roommates and I decided to make some french toast! We didn’t have any bread though, so we had the world’s greatest idea ever: bagels (which was insanely good by the way). It was a rare sunny day in Juneau, so my friend (from Sweden) and I decided to go do homework on the dock before class started. Leaving the sun to go to class was the hardest thing I’ve ever had to do, but it was actually worth it. We had a guest lecturer, Jim Powell, who came to talk to us about climate change in Juneau (super interesting)-- it was crazy to learn just how big of an impact cruise ships and tourism have on the environment.
Tuesday
Unfortunately, my favorite class ever (Northwest Coast Carving) was canceled this week. On the bright side, my Tuesday just became completely free. It was because of this that I was able to go on one of the coolest hikes I’ve ever been on! My friend and I took the bus and walked to the trailhead of the West Glacier hike. Pretty early on, it split off– one side being the actual trail and the other an unmaintained path. Of course, we went on the unmaintained one in hopes of getting to see the glacier from a better vantage point. (Don’t worry mom, I looked up the trail beforehand and the unmaintained path was heavily trafficked and actually recommended). I actually got to go rock climbing as part of the hike too and it was SUPER fun. I was extremely underprepared though because by the time we got back, I was starving. We made a pit stop at the campus cafeteria and then did homework the rest of the day.
Wednesday
Wednesday morning I had the bad half of a bagel for breakfast (the bottom half). It was pretty rainy and cold the whole day, so it was mainly spent inside and doing homework. After class, a group of us went grocery shopping and I got a BUNCH of stuff to bake– I’m really excited to try pumpkin bread this year!
Thursday
Thursday I also had no class, so that meant I was able to go on another fun adventure! My friend and I walked the entire loop around the lake, which was absolutely beautiful. When we got back, he taught us all how to make Swedish pancakes (which are honestly just crepes but SO so good). It was the first time I successfully flipped something in a pan though, very exciting stuff! Later that night, we had our other friends over and cooked homemade pesto pasta for them. Friday
Friday also began with a bagel (my diet has been very consistent this week). I tried to use today to catch up on homework, but it was another sunny & warm day, so of course, it had to be spent outside. I set up my hammock and hung out with friends for a while before ultimately deciding to go rent some kayaks and canoes in the afternoon. I found out that I’m horrible at canoeing but it was still a great way to end the week! After we put the gear away, we went to a restaurant by the bay to watch the sunset and now I’m back home wrapping up some assignments for the week. We’re planning to hike one of the mountains sometime this weekend, so stay tuned for pictures of that! :)
French Toast Bagels are the best! They make them in my hometown at the bagel store and it's actually one of their best sellers. I love how much you guys bake and cook from scratch. I am totally using that pesto pasta recipe. Can't wait to see the mountain pictures!
